On a keyboard, Shift starts and holds a wheelie, C switches the camera, and 1 and 2 are cosmetic one-handed and no-handed rides. Touch and controller keys were not confirmed.

These inputs are the ones the guide lists. The official screenshots show the wheelie and the helmet, not the key labels. A phone or controller layout was explicitly left unconfirmed by that guide.
Where to practice
Long straight roads keep the balance timer running for the 30-second Balance Practice quest and the 3-minute Street Legend total. The highway is the same place the cash guide uses for top speed.
